Elderly Care Recipes: Homemade Chocolate Sandwich Cookies

Elderly Care in Riverside, CT

Elderly Care in Riverside, CTFor most people, cookies bring up wonderful memories from their childhoods. Whether it was their favorite afternoon snack with a glass of cold milk, a holiday treat they knew their grandmother was going to bring to the family dinner, or the tradition of leaving a plate out on Christmas Eve, cookies have a special place in people's hearts.

As a family caregiver for your aging parents, you can bring back those memories and create new ones in your elderly care plan by baking cookies together. Not only will recreating these favorite chocolate sandwich cookies give you something sweet and indulgent to enjoy as an afternoon snack, dessert after dinner, or treat while watching a movie together, but the actual process of making the cookies is fantastic for stimulating your parents' minds and boosting their cognitive processing, critical thinking, and memory skills.

What You Will Need

What to Do

  • Add 2 sticks of butter and ¾ cup of granulated sugar to electric mixer and beat until pale and fluffy
  • Beat in egg yolk and 1 teaspoon vanilla extract
  • Mixing at low speed, add in flour mixture in 3 batches until a dough forms
  • Divide dough in half and form each piece into a 6 inch square
  • Wrap dough in plastic wrap and chill until firm (2 to 3 hours)
  • Preheat oven to 350 degrees F
  • Line the two baking sheets with parchment paper or silicone baking mat
  • Roll 1 piece of dough between sheets of parchment paper until it is one 14x10 inch rectangle 1/8 inch thick.
  • Slide dough onto a tray and freeze for 10 minutes or until firm. Repeat with remaining dough
  • Cut out as many rounds as possible from first chilled square, reserving and chilling the scraps
  • Transfer cookies onto a buttered baking sheet, arranged ½ inch apart

  • Cool on the sheet on cooling rack for 5 minutes, then off the sheet and directly on the rack until completely cool
  • Repeat process with scraps
