Not only will recreating these favorite chocolate sandwich cookies give you something sweet and indulgent to enjoy as an afternoon snack, dessert after dinner, or treat while watching a movie together, but the actual process of making the cookies is fantastic for stimulating your parents' minds and boosting their cognitive processing, critical thinking, and memory skills.

What You Will Need

  • 2 cups of all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon of salt
  • ½ cup of Dutch-process cocoa powder
  • 2 ½ sticks of unsalted butter, at room temperature
  • 3 teaspoons of pure vanilla extract
  • 1 large egg yolk
  • ¼ cup of vegetable shortening
  • 2 cups of sifted confectioners’ sugar
  • Whisk
  • Electric mixer
  • Knife
  • Plastic wrap
  • Two baking sheets
  • 2 mixing bowls
  • Parchment paper or silicone baking mat
  • Cooling rack
  • Rolling pin
  • Round dough cutter

What to Do

  • Whisk together cocoa powder, flour, salt and baking powder in a large mixing bowl
  • Add 2 sticks of butter and ¾ cup of granulated sugar to electric mixer and beat until pale and fluffy
  • Beat in egg yolk and 1 teaspoon vanilla extract
  • Mixing at low speed, add in flour mixture in 3 batches until a dough forms
  • Divide dough in half and form each piece into a 6 inch square
  • Wrap dough in plastic wrap and chill until firm (2 to 3 hours)
  • Preheat oven to 350 degrees F
  • Line the two baking sheets with parchment paper or silicone baking mat
  • Roll 1 piece of dough between sheets of parchment paper until it is one 14x10 inch rectangle 1/8 inch thick.
  • Slide dough onto a tray and freeze for 10 minutes or until firm. Repeat with remaining dough
  • Cut out as many rounds as possible from first chilled square, reserving and chilling the scraps
  • Transfer cookies onto a buttered baking sheet, arranged ½ inch apart
  • Bake cookies until baked through and slightly puffed, usually around 10 to 12 minutes
  • Cool on the sheet on cooling rack for 5 minutes, then off the sheet and directly on the rack until completely cool
  • Repeat process with scraps
  • Beat remaining butter and shortening together at medium speed until smooth
  • Reduce the speed to low and beat in the vanilla and the sugar gradually
  • Increase sped and beat on high for 3 minutes or until the filling is fluffy and light
  • Apply a teaspoon of filling to the flat side of half of the cookies
  • Top each cookie with an unfilled cookie to make a sandwich
  • Serve at room temperature
