This does not mean, however, that you cannot still indulge in delicious dishes and treats. This cake contains no flour so it is acceptable for eating throughout the entire eight days of the holiday. Because it is so delicious, it is especially perfect for serving as part of your celebratory feast after your Seder.

Of course, as a family caregiver you are not just thinking about the flavor of the food that you are serving your parent. You also want to feel confident that you are keeping him at least close to his nutritional goals. This cake gets its rich, luxurious texture from dates. This sweet fruit is packed with fiber. Combined with the protein from the walnuts and antioxidants from the bittersweet chocolate, these ingredients make this cake something that you do not have to hesitate serving during the holiday or any other time of year.

What You Will Need

  • 3/4 of a cup of pitted dates
  • Cooking spray
  • 3 cups of walnut halves
  • Kosher salt
  • 3/4 of a teaspoon of ground cinnamon
  • 1 teaspoon of vanilla extract
  • 1/2 of a cup of sugar
  • 4 large eggs, separated
  • 2 teaspoons of finely grated orange zest
  • 2 ounces of bittersweet chocolate
  • 4 tablespoons of unsalted margarine or butter
  • 1 teaspoon of honey
  • Chopped toasted walnuts
  • A sharp knife
  • A cutting board
  • A nine inch round cake pan
  • A food processor
  • A whisk
  • A small bowl
  • A large bowl
  • A mixer
  • A cooling rack
  • A microwave safe bowl
  • Plastic wrap
  • Parchment paper
  • A serving platter

What to Do

  • Preheat the oven to 350 degrees F
  • Chop the dates and set aside
  • Chop the chocolates and set aside
  • Coat the bottom and sides of the cake pan with the cooking spray
  • Line the cake pan with parchment paper
  • Place the walnuts, 1/4 of a cup of sugar and cinnamon into the food processor
  • Pulse until finely ground, but not quite a powder
  • In the small bowl begin to whisk the egg with vanilla and orange zest
  • When fully incorporated, set aside
  • In the large bowl with the mixer, beat the salt and egg whites together on medium high
  • Beat until foamy
  • Add the remaining 1/4 of a cup of sugar 1 tablespoon at a time while beating
  • Continue this for 8 minutes, until soft peaks form
  • Fold in the dates and yolk mix
  • Fold in the ground walnut mix
  • Scrape the batter into the prepared pan
  • Place in the oven to bake
  • Bake for 23 to 25 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean
  • Allow to cool in the pan on a cooling rack
  • Run a knife along the sides
  • Invert the cake onto a platter
  • Set aside
  • In the microwave safe bowl, put the chocolate and honey in
  • Mix for a few seconds and add the margarine or butter
  • Cover with plastic wrap
  • Microwave for about 2 minutes, until the margarine or butter melts
  • Remove from the microwave and discard the plastic wrap
  • Whisk the butter or margarine into the chocolate until smooth
  • Cool slightly
  • Pour the chocolate over the cake
  • Top with walnuts
  • Serve warm
