Of course that means all of the fun, excitement, and indulgence that this season has to offer, and right on the top of that list is cookouts and picnics. May is National Barbecue Month. Perfect for bringing along with you to a picnic or to serve as an alternative to the grilled foods at a cookout, barbecue is bold and rich in flavor, and contains a strong dose of protein, making it a meal that you can feel good about making a part of your summer senior care.

One of the best parts about barbecue is its versatility. Different regions have different approaches to barbecue and that means everyone can find a style that they love. This recipe is a sweet and spicy version that benefits from a good helping of vinegary slaw on top, but you can easily reduce the cayenne to cut the spice and trade out the vinegar base for a creamier coleslaw to fit you and your parent's flavor preferences.

This barbecue makes the perfect sandwich, but you do not have to serve it that way. Cut the carbs by serving it without the bun, or follow current food trends by piling it high on a hamburger or hot dog.

What You Will Need

  • An 8 1/2 pound bone in Boston butt
  • 1/2 of a cup of sugar
  • 1 tablespoon of smoked paprika
  • 1/4 of a cup of Kosher salt
  • 1 tablespoon of cayenne pepper
  • 1/2 of a teaspoon of mustard powder
  • 1/2 of a teaspoon of ground celery seed
  • 2 teaspoons of ground cumin
  • A dozen hamburger buns
  • Vinegar slaw
  • Barbecue sauce
  • A small bowl
  • Plastic wrap
  • A roasting pan
  • Heavy duty foil
  • A fork
  • A knife
  • A baking sheet
  • Butter

What to Do

  • In the small bowl, mix together the paprika, cumin, cayenne, salt, celery seed, sugar and mustard powder
  • When well mixed, remove 4 tablespoons for later use
  • Place the pork butt on a line of plastic wrap
  • Generously rub the pork with the mixed seasoning
  • When well coated, wrap the pork in the plastic wrap thoroughly
  • Place in the refrigerator for at least 4 hours and up to 1 day
  • Preheat the oven to 275 degrees F
  • Line the roasting pan with the foil
  • Remove the pork from the refrigerator and toss the plastic wrap
  • Place the pork in the roasting pan, fat side facing up
  • Place the pork in the oven to cook
  • Cook about 8 hours, or until tender to the knife
  • Remove it from the oven
  • Allow the pork to rest about 20 minutes
  • Still in the roasting pan, use the fork and knife to shred the pork as much as possible
  • Butter the bottom half of each bun lightly
  • Preheat the broiler
  • Place the buns on a baking sheet with the buttered ends facing up
  • Place the buns in the broiler
  • When toasted, remove the buns
  • Pile shredded pork onto the buttered buns
  • Add some of the extra rub, slaw and barbecue sauce to the pork
  • Serve warm
