Between running errands, taking care of the house, going on outings, doing crafts and other hobbies, volunteering throughout the community, exercising, and spending time with friends and loved ones, however, who has the time in their active, vibrant elder care journey to fit in making a homemade lunch and sitting down to eat it?

Enjoying meals together, and encouraging your parents to eat healthy, satisfying meals is a wonderful way to create lasting relationships, build memories, and support mental and emotional health, but it can be time consuming to always prepare fresh meals. Rather than resorting to fast food or prepackaged items to get a quick lunch when you are busy, turn to your own "instant" lunch options. This recipe lets you devote a little bit of time the day before you know your schedule is packed and then enjoy a delicious, healthy meal in a matter of minutes.

What You Will Need

  • 1/3 of a cup of instant couscous
  • 1 lemon wedge
  • 1/2 to 1 teaspoon of harissa
  • 1/2 of a teaspoon of curry powder
  • 1 tablespoon of unsalted butter
  • 2 tablespoons of fresh cilantro leaves
  • 2 tablespoons of coarsely grated carrot
  • 3 pitted Kalamata olives
  • 6 cherry or grape tomatoes
  • 1/4 of a cup of canned chickpeas
  • A sharp knife
  • A cutting board
  • A 16 ounce lidded heat safe container
  • A stirring spoon

What to Do

  • Drain and rinse the chickpeas and then set aside
  • Quarter the tomatoes and then set aside
  • Quarter the olives and then set aside
  • If needed, roughly grate the carrot
  • Roughly chop the cilantro leaves and set aside
  • Pour the couscous into the bottom of the 16 ounce lidded heat safe container
  • Top the couscous with the chickpeas and stir
  • Next add the tomatoes, olives, and carrots and stir
  • Add the cilantro, butter, curry powder and 1/4 of a teaspoon of salt and stir
  • Add the harissa and continue to stir
  • Place the lemon wedge on the top of the mixture and cover
  • Refrigerate at least 6 hours and up to overnight
  • When ready to eat, remove the container from the refrigerator
  • Remove the lid and take out the lemon wedge
  • Set the lemon wedge to the side for use later
  • Boil 1/2 cup of water and add to container, cover
  • Allow the container to sit about 6 minutes, until the couscous absorbs all of the liquid
  • Squeeze the lemon wedge over the couscous
  • Stir once again
  • Serve hot
